Foodways Texas Symposium: Our Barbecue, Ourselves

Texas and barbecue, you can’t have one with out the other. Smoked meat is ingrained in our culture. In April Foodways Texas will take you on a journey into the past, present, and potential of barbecue with a focus on its connection to Texas’ cultural history and identity. This event will touch on every aspect of barbecue, from how the meat is raised to the traditions behind wood and pits and the secrets to perfect flavor. Some of Austin most renowned pitmasters including Aaron Franklin of Franklin BBQ, Jesse Griffiths of Dai Due, and Wayne Mueller of Louie Miller Barbecue will join other master from around the state and from Tennessee to share the truths and secrets from the pit. Speakers at the event will include John T. Edge from the Southern Foodways Alliance, Austin Photographer Jody Horton, and Toni Tipton-Martin from the Jemima Code.
